The new vintage of Nexus Kosher is now available, a wine made with Tempranillo from our young vines located in Pesquera de Duero and Piñel, under the parameters of the Kosher Passover certification.
Kosher wines are those suitable for consumption by the Jewish community, the term means ‘pure‘ and to achieve this certification the winery must be follow several parameters from the vineyard, processing, bottling and labelling. The most remarkable difference is the naturalness in the process, with less extraction and without sulphur added.
The vintage 2014 was fantastic in Ribera del Duero, the climatology favoured a correct and homogeneous ripening of the bunches. This Kosher is now at its perfect moment of consumption and we recommend taking it at a cool temperature.
In its tasting, predominate the varietal aromas like red and black wild fruits, liquorice and lactic sensations, also vanilla touches of its light aging in barrels.
The hole elaboration process of Kosher wine must be carried out by a Rabbi or by a person designed by him from his community, to preserve the purity.
The fermentation of Kosher wines must be developed with natural yeasts, it can be carried out both in stainless steel tanks and in barrels (which must also have Kosher certificate). In any case, they must be used exclusively for the elaboration of this wine. Likewise, the Sabbath precepts must been always respect, which includes the off days or sacred holidays of the Jewish religion.
As a particularity, our Kosher wine is also ‘Passover‘, the purest and most suitable for the Jewish Easter. This important feast recalls the liberation of the Jewish people from Egyptian slavery and during those practitioners can’t eat diverse food, including yeast or fermented grains.
Our Kosher Passover is a wine that we produce to delight those who like fresh reds, very fruity and light. For its service in the Jewish community must be manipulated or served only by practitioners to ensure its purity at the time of consumption.
