Wine Racking is one of the most important works in our winery to get quality wines.
This task involves transferring the wine to another container. The final intention is to separate the wine from suspended particles and residues.
Dated today, we have finished the racking works of vintage 2014. This task is done every 3 months, following a quality protocol and traditional process.
Before emptying the barrels where the wine is, we have to smell each one to check if the wine is ok. Next, the oenologist takes a sample to be tested in the laboratory. After that, he tastes the wine to know how flavours, colours and tannins are evolving on the wine.
After that, workers clean each barrel with pressurized water at very high temperature to remove yeasts and fungus.
Racking comes to the end when the barrels are filled up again. Then they are moved back to the Barrels Room. In this room the wine rests inside the barrels until it reaches roundness.
